I'm a little embarrassed to admit this, but prior to yesterday I had never made chocolate chip cookies from scratch. So this is one of the recipes I tried for my goal of trying out 10 new recipes. You can also substitute all ingredients with organic ingredients. Enjoy!
Chocolate Chip Cookies
- 2 1/4 cups of flour
- 1 tsp baking soda
- 1 cup (2 sticks) butter, softened
- 3/4 cup sugar
- 3/4 cup brown sugar, packed
- 2 tsp vanilla extract
- 2 eggs
- 2 cups chocolate chips
- 1 cup chopped walnuts or pecans (optional)
* Pre-heat oven to 375 degrees. Stir flour, baking soda and salt together. Set aside. In separate bowl beat butter, sugar and brown sugar at medium speed until creamy. Add vanilla and eggs to creamy mixture at low speed. Gradually blend dry mixture into creamy mixture. Stir in chocolate chips. Drop dough by tablespoon onto ungreased cookie sheet. Bake 8-10 minutes.

Delight of the Day
Sometimes we like to share happy tidbits!! And to even out the Universe I should have (at least!) one good thought for every bad, right? For my first Delight of the Day entry:
Sky is one of the best cooks I've ever met, and hands down one of the best I've ever lived with!! I love when he cooks dinner for us, which is pretty often. He can make even the simplest foods so yummy. He's cooking tonight and I'm so thankful I'm not the one standing in the hot kitchen whipping something up! So my delight of the day is my sweet fiancé cooking dinner for me:)

Recipe: Easy Jambalaya
This recipe is quick to make and so yummy!! You can serve with bread or veggies on the side, or eat it all by itself!
Easy Jambalaya
- 8oz package of Vigo Black Beans and Rice
- 1/2 package of Kielbasa sausage
- shredded cheese
- sour cream
*Prepare black beans and rice. Boil kielbasa on low until rice is finished. Slice sausage and mix in with beans and rice. Cover with cheese and serve with sour cream on the side!
Serves 3-5 people. This recipe is so easy and delicious!! Let me know if you try it!!

Recipe: Chicken and Stuffing Casserole
This post is dedicated to Pam! The recipe I used for dinner tonight is pretty quick and super easy!! Yummy too:) This serves 6+ so feel free to half the recipe for a smaller meal!! This dish can also be made without the noodles (only use 1 can of soup) or with different veggies.
Chicken and Stuffing Casserole
- 2 boneless, skinless chicken breasts
- 2 cans of Cream of Mushroom soup
- 1 package of egg noodles
- 1 can of sweet peas
- 1 box of Stove Top Stuffing
- 2/3 cup sour cream
- salt and pepper to taste
* Pre-heat oven to 375 degrees. Boil noodles as directed and drain well. Saute chicken in butter until thoroughly cooked and chop into cubes. Prepare stuffing as directed. Drain peas. Mix chicken, soup, noodles, peas and sour cream together. Spoon into a casserole dish. Sprinkle salt and pepper to taste. Top with stuffing. Bake for 20-25 minutes.
